In the North of Italy, along Italy's Alpen border with Austria coffee is roasted as light as cinnamon. As you move South to Rome the beans become more like a chestnut brown in color, and South of Naples, the Italian roasting tradition becomes darker and darker. Cross over to Sicily, and the roast is a glistening ebony.
